Misc Blog Stuff
Hi guys - Here are a few notes on using the blog. First, be sure you upload a pic of yourself and click on the left to Follow the blog. This puts all of our pics there so we can see what others look like. Second, feel free to start new topics, by clicking New Post in the upper right hand corner. If you want to comment on a topic that is already here, use Comment. If you want to start a new topic, use New Post. I'm getting tired of making all the new topics! 5 Minute Steel Cut Irish Oatmeal

Good morning! Several of us were talking about liking steel cut Irish oatmeal, which uses the whole grain and gives you much more fiber than regular rolled oats. It's very chewy and tastes great. The down side? It takes at least 30 minutes to cook, and we are all in a rush in the a.m. Here's what I found online: steel cut oatmeal that cooks in 5 minutes! I eat it all the time, with ground flax, pecans, and a little cinnamon or semi-sweet chocolate chips. In fact, I am eating a bowl right now! They carry the slow-cook kind at the stores around here, but I've never seen this one. Here's where I buy it: FoodIreland.com. Be sure you get the one that says "Quick & Easy" on the box. I've also seen online recipes for cooking the long-cooking kind overnight in the crock pot so it's ready when you get up. I haven't tried it yet but I will and I'll report how it goes. In the meantime, get the Quick & Easy!

Introductions
Hi everybody -- I thought since we are all a mishmosh of friends that met various ways I would add a place for us each to introduce ourselves, tell a little about why we are here and how we got involved in LWL. I had the idea because I want to introduce my friend Gina, who joined last night. Then I realized I hadn't introduced myself! So I will, in a comment. Healthy Lunch Ideas
My favorite lunches at home:
- Campbell's Healthy Request Grilled Chicken & Sausage Gumbo soup (whole can) with 5 low sodium saltine crackers
- ham or turkey sandwich on whole wheat with canola mayo (has same specs as light mustard but uses good fat!) and mustard, 100-calorie pack cheddar Sun Chips
- Salad with grilled chicken and light Newman's dressing
- Small portion of leftovers from previous dinner
