5 Minute Steel Cut Irish Oatmeal

Good morning! Several of us were talking about liking steel cut Irish oatmeal, which uses the whole grain and gives you much more fiber than regular rolled oats. It's very chewy and tastes great. The down side? It takes at least 30 minutes to cook, and we are all in a rush in the a.m. Here's what I found online: steel cut oatmeal that cooks in 5 minutes! I eat it all the time, with ground flax, pecans, and a little cinnamon or semi-sweet chocolate chips. In fact, I am eating a bowl right now! They carry the slow-cook kind at the stores around here, but I've never seen this one. Here's where I buy it: FoodIreland.com. Be sure you get the one that says "Quick & Easy" on the box. I've also seen online recipes for cooking the long-cooking kind overnight in the crock pot so it's ready when you get up. I haven't tried it yet but I will and I'll report how it goes. In the meantime, get the Quick & Easy!

  1. Kathy, my Weight Watchers leader does the slow cooker method and swears by it. You can leave it, cooked, in the fridge for a few days, so it lasts. Or, I believe you can freeze it. Sounds yummy--I'll have to try it. Thanks!:)

  2. I cook on Sunday, enough for the whole week then heat up 1/2 cup every am, throw in some chopped apple, toasted almonds (also done for the week on Sun.) & cinnamon. Delicious! The oats keep in the refridg. for up to two weeks.

  3. Kathy, I bought the waffles, couldn't find the flax kind at Stop & Shop, got Eggo multi-grain, low-fat. Also got the drk. cherries. Was it 1 cup of dark cherries & 1/4 cup semi-sweet choc. chips? I'm asking about the Flat Belly diet, recipe you told us about? The frozen dark cherries are delicious & only 80 calories for 1 cup, but are expensive at $3.29 for 2 1/2 cups. Let me know if anyone sees frozen dark cherries at a better price.
    Thanks,
    Lynne

  4. Yes, 1 C cherries and 1/4 cup choc chips. That's a total of 397 calories for the meal with no beverage,so if you need to save calories cut down the chocolate chips.
